High protein Tomato soup and grilled cheese



Ingredients:
  • 1.5 lbs tomatoes ( I used tomatoes on the vine) about 4
  • 5-6 cloves of garlic
  • 1 yellow onion
  • 1 red bell pepper
  • Olive oil
  • 1 tsp onion powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp smoked papkira
  • 1/4 tsp chili powder
  • salt and pepper to taste ( I used bacon infused flaky salt and Janes Krazy mixed up pepper)
  • 3/4 cup full fat cottage cheese
  • 1 cup chicken bone broth
  • 1 pkg fresh basil ( about 10 leaves)
  • Rustic potato sourdough bread
  • Butter
  • American cheese slices
  • Shredded mozzarella

Steps:

Preheat oven to 425 F

Chop tomatoes, red pepper and onion. Peel garlic. Toss all veggies on a sheet pan with olive oil and all spices.

Bake for 1 hour

When finished baking add to a blender with 3/4 cup cottage cheese, chicken bone broth and the basil. Blend until well combined.

Butter the bread, top with mozzarella and american cheese. Fry in non stick pan for a few minutes on each side over medium heat until golden brown. Serve with the soup.
