High protein Tomato soup and grilled cheese
Ingredients:
- 1.5 lbs tomatoes ( I used tomatoes on the vine) about 4
- 5-6 cloves of garlic
- 1 yellow onion
- 1 red bell pepper
- Olive oil
- 1 tsp onion powder
- 1/2 tsp red pepper flakes
- 1/2 tsp smoked papkira
- 1/4 tsp chili powder
- salt and pepper to taste ( I used bacon infused flaky salt and Janes Krazy mixed up pepper)
- 3/4 cup full fat cottage cheese
- 1 cup chicken bone broth
- 1 pkg fresh basil ( about 10 leaves)
- Rustic potato sourdough bread
- Butter
- American cheese slices
- Shredded mozzarella
Steps:
Preheat oven to 425 F
Chop tomatoes, red pepper and onion. Peel garlic. Toss all veggies on a sheet pan with olive oil and all spices.
Bake for 1 hour
When finished baking add to a blender with 3/4 cup cottage cheese, chicken bone broth and the basil. Blend until well combined.
Butter the bread, top with mozzarella and american cheese. Fry in non stick pan for a few minutes on each side over medium heat until golden brown. Serve with the soup.
