Tomato Butter and Horseradish Board Sauce with Steak
Tomato Butter ingredients:
- 2 sticks salted sweet cream butter, cubed
- 2 Tbsp sun-dried tomatoes with Italian herb packed in oil (get Sun-Dried Tomatoes here!)
- or
- 2 Tbsp oven-roasted cherry tomatoes
- 1 tsp Maldon flaky salt or salt to taste (get Maldon Flaky Salt here!)
- 2 cloves of garlic
Equipment:
- Food processor
- Spatula
Preparation:
1. Soften the sticks of butter slightly at room temperature and cut into cubes
2. Add the cubed butter to the food processor along with the 2 cloves of garlic, the sun dried or roasted tomatoes and the flaky salt.
3. Pulse or process the ingredient on low until creamy and well combined
I served this with char-grilled Italian bread brushed with olive oil.
Board Sauce ingredients:
- 2 Tbsp freeze-dried parsley (get Parsley here!)
- 4 garlic cloves, minced
- 1 Tbsp creamy horseradish
- 1 Tbsp prepared horseradish
- 2 tsp whole grain mustard
- 1 tsp whole mustard seeds
- 2 tsp red wine vinegar
- 1 tsp olive oil
Preparation:
Combine all ingredients in a small bowl, whisk to incorporate.
I served this with a flaky salt rubbed rib-eye cap steak basted in butter, thyme and garlic.
