Peach Lemonade
Ingredients:
- 4 peaches
- 8 lemons
- 1 1/2 cups granulated sugar
- 5 cups cold water
- 2 cups ice
Preparation:
- Pit and peel the peaches using a paring knife
- Dice 3 of the peaches and cut the remaining peach into slices.
- In a medium saucepan over medium heat, cook the diced peaches and the sugar until the sugar is dissolved and the mixture becomes saucy. About 10 minutes. Remove from heat and use a stick or immersion blender to puree the mixture. Alternatively, you can place the peach and sugar mixture into a blender to puree it. Allow the mixture to cool.
- Meanwhile, juice the lemon and pour the juice into a large pitcher.
- Add the cooled peach puree, the peach slices, and 5 cups of cold water. Stir well.
- Add the 2 cups of ice and serve.
You can swap the peaches for 2 1/2 cups of chopped rhubarb for a fun spring rhubarb season version of this lemonade. All other steps are the same. Strawberries or raspberries work as well.
